
Fixing Those Cold Edges in Big Bread Ovens with 110V Halogen Lamps
If you’ve ever run a large-scale oven, you know the frustration. The loaves in the middle look perfect, but the ones on the edges? They’re pale. They’re underbaked. It’s a classic problem—the heat just leaks out of the oven’s perimeter faster than it can keep up. To fix this, we’ve been using 110V shortwave halogen lamps. Here is the thing about these bulbs: they don’t bother warming up the air around them. Instead, they send out infrared radiation that travels in a straight line and hits the dough directly. It’s like a targeted heat punch. You aren’t wasting energy trying to heat the entire oven cavity; you’re just putting the heat exactly where it’s missing. Installation is pretty straightforward. Since they’re 110V, they usually slide right into standard kitchen circuits without a huge headache. We use high-purity quartz glass because these things go through a lot of rapid on-and-off cycles, and you don’t want the filament giving up on you halfway through a shift. One warning, though. These lamps gethot. Much hotter than your old coils. Make sure your mounting brackets can handle the heat, or you’ll end up warping your chassis. On the shop floor, we treat these lamps like a “booster.” We tuck them into the perimeter zones. The moment the sensors pick up a temperature dip at the edges, the lamps kick in and bridge the gap. No more “pale edge” sourdough. Just watch your spacing. If you mount them too close to the bread, you’ll scorch the crust before the center even thinks about being done. You’ll need to play around with the distance between the bulb and the tray to get the balance right. And for heaven’s sake, use high-temp leads for the wiring. If you use cheap insulation, it’ll melt, and then you’ve got a much bigger problem on your hands.
